Peppered Papaya and Shrimp Patties

Ingredients  
4 tablespoons butter
1 small onion, chopped small
1/2 red pepper, chopped small
1 teaspoon garlic, minced
1-2 jalapeno peppers, finely chopped
2 eggs
1 pound shrimp, pureed
3-4 cups breadcrumbs
1 papaya, peeled, seeded, chopped
  salt and pepper to taste
2 teaspoons lime juice
2 teaspoons Dijon mustard
1 tablespoon fresh cilantro or parsley, chopped
1/2 cup flour
 
Preparation
Sauté onion, red pepper, garlic and jalapeno in 2 tablespoons of butter. Remove from heat and cool slightly. In a bowl, mix together eggs, onion mixture, shrimp and next six ingredients. Form mixture into patties, approximately 3 inches across and 1 inch thick. Put flour on plate and lightly coat patties with flour. Melt remaining 2 tablespoons butter in skillet and fry patties over medium heat 3-4 minutes on each side, or until golden and crispy. Serve hot.
