Shrimp with Citrus Salsa

cups Florida orange juice |

green onions, sliced |

key limes |

cup honey |

jalapeno peppers, sliced |
| 1/2 |
cup kumquats, sliced |

ground ginger |

red bell pepper, sliced into strips |

banana, sliced |

Preparation |
Heat orange juice and onions in skillet. Add
juice of lime and honey. Add jalapeno, kumquats, ginger, and
bell pepper and cook covered on low heat for 20 minutes. Remove
lid and cook 20 minutes more until juice is reduced. Add the
banana and mango and cook for 5 minutes. |

spray olive oil |

tablespoons lemon juice |

Preparation |
Peel shrimp. Baste with olive and lemon juice.
Grill or sauté; shrimp. Serve shrimp on yellow
rice, topped with 2 tablespoons of salsa.
Yield
8-10 servings
Note
Salsa can be prepared in advance and frozen.
