Sweet and Sour Rock Shrimp |

pound cooked, peeled and deviened Florida rock shrimp |
| 1 |
cup Florida green bell pepper, chopped |
| 1/4 |
cup butter |
| 16 |
ounces pineapple chunks in heavy syrup |
| 1/2 |
cup white vinegar |
| 1/4 |
cup sugar |
| 2 |
tablespoons cornstarch |
| 1 |
tablespoon soy sauce |
| 1 |
cup Florida cherry tomato halves |

Preparation |
|
Cook bell pepper in butter until just beginning
to brown. Combine pineapples and syrup, vinegar,
sugar, cornstarch and soy sauce; mix well and add to bell
pepper. Cook, stirring constantly, until
mixture is thick. Stir in tomatoes and shrimp and heat thoroughly.
Serve with cooked rice.
