Florida Blue Crab Au Gratin

Ingredients
4 tablespoons butter
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
1 cup half and half
1/2 cup milk
1/2 cup white wine
1 1/2 teaspoons grated Florida onion
1 1/2 tablespoons Florida lemon juice
2 1/2 cups fresh Florida blue crab lump meat
1 cup grated cheddar cheese (may substitute Swiss cheese)
1/2 cup bread crumbs
  butter
 

Preparation
Preheat oven to 350 degrees F. Melt butter in medium saucepan; stir in flour, salt and pepper until blended. Slowly add milk and wine; stir until smooth. Add onion and lemon juice. Cook over low heat until sauce thickens, stirring constantly. Grease a 2-quart casserole or 4 shallow gratin dishes. Pour a small amount of sauce to cover bottom of casserole. Add a layer of crab, sprinkle with cheese. Repeat layers and end with a layer of cheese. Cover with bread crumbs and dot with butter. Bake for 45 minutes. Let sit 5 minutes before serving.
